Vanilla Meringue Bones

A Halloween treat that looks like old bones.


Vanilla Meringue Bones

6 egg whites

1/4 teaspoon cream of tartar

1 teaspoon vanilla extract

1 cup superfine sugar

pinch of salt



Preheat the oven to 225 degrees F (110 degrees C) and line 2 baking sheets with parchment paper.

In a large mixing bowl, beat egg whites with an electric mixer until foamy. Add cream of tartar, vanilla, and salt. Beat until soft peaks form. Slowly add the sugar, beating all the while, and continue beating until shiny, stiff peaks form.

Use a pastry bag, filled a little over half full, to form the bone shapes on the parchment paper (If you want to add a round tip to the pastry bag, you can, but I found it was just as easy to make these shapes with no tip at all).

Bake for 60-70 minutes. Then turn off the oven and let the baking sheets remain in the warm oven for another 60-70 minutes.

Cool completely before serving. Store in an airtight container.

Makes about 14 cookies.
